How To Cook Ogbono Soup With Royco Goat Cubes (Serves 6)

Ingredients

1 kg goat meat

450g stockfish, pre soaked

450g dried fish, washed

225g whole dried prawns, cleaned

225g dried ogbono seed

225g dorund crayfish

4 chillies, ground to a paste

25g ground pepper

1 medium onion

290ml palm oil

1.75 L stock or water

4 Royco Goat Cubes

Salt to tatse

 

Method

1. Wash the meat thoroughly and place in a pot.

Add the onions, ground chilli and some stock or water.

Cook for 30 minutes.

Add the dried fish and stockfish, cook for a further 10-15 minutes, adding a little water or stock as needed to stop it from burning.

In another pot heat the oil and dry the ground seeds for 3 minutes to bring out the nutty flavour.

2. Gradually add more stock with Royco Goat Cubes, and whisk until it draws and bubbles.

Add the cooked meat with crayfish and pepper.

3. Allow to simmer for 10 minutes, add salt to taste and serve with pounded yam.
